Ricotta is obtained from whey, the liquid part left after mozzarella-making. It is heated until the flakes rise to the surface, creating its soft and delicate texture.

Traditional ricotta is not made directly from milk, but from whey: the liquid residue from cheese-making. In packaged products such as Valcolatte’s, the ingredients and treatments used are always shown on the label.

Ricotta may contain lactose, although in amounts that vary depending on the product and production process. For those who are intolerant, it is always advisable to check the label or choose lactose free versions, when available.

Our ricotta is made from pasteurized milk whey, so it is safe to consume during pregnancy.
