Soft and delicious, this recipe is a reinterpretation of the original crescia, prepared by adding ricotta and pecorino cheese to the dough. Thanks to its soft texture and the delicate flavour of RiCcotta, crescia marchigiana is an extremely versatile dish, perfect as an appetizer or a main course, but also as an afternoon snack or an aperitivo. And the best part? It can be filled with whatever you like! Today, we are serving it with a delicious combination: RiCcotta Spalmabile, cured ham and pears.

Start by preparing the starter: dissolve the yeast in warm milk, add a tablespoon of flour to obtain a soft dough and leave it to rise.
Meanwhile, mix RiCcotta la Gustosa with the Parmesan, Pecorino and egg, season with salt and add a drizzle of oil. Then add the flour and start kneading by hand.
Add the starter dough you set aside to the RiCcotta dough, add a little milk to obtain a soft, smooth dough, pour it into a greased baking tin and leave it to rise for one hour.
Bake at 200°C for half an hour and, once out of the oven, fill it as desired.
